Yum!

I had forgotten how good homemade hummus could be. We've been buying so much of late (laziness!) that the good bite of fresh lemon had been lost.

Basic Hummus

1 15 oz can garbanzo beans/chickpeas
2-3 tablespoons tahini
2 tablespoons minced onion (dried is okay)
2 cloves garlic, peeled and roughly chopped
6-7 tablespoons lemon juice
olive oil to taste

Put all the ingredients except the olive oil, in order, in a food processor. Blend the lot until it starts to get to a creamy consistency (you may need to stop and push some stuff down off the sides and/or pull some stuff up from the bottom once or twice). As it gets close to the consistency you want, drizzle olive oil in gradually through the spout on top of the processor; this will soften up the mix, add some flavor, and get it to a nice, creamy goodness.

Scoop out into a bowl and either chill or serve immediately.

I have 30 pounds of lemons in my kitchen (no, I didn't BUY them, they came off of the tree in the back yard, and Ray won't throw them out).

Their juice would make a LOT Of hummus.
