Peanut Butter Cookies
1 cup maple syrup
1/2 cup canola oil
1 cup natural peanut butter
2 teaspoons vanilla
2 cups unbleached flour
Preheat oven to 350.
Combine maple syrup, canola oil, peanut butter and vanilla in a medium bowl. Add flour and mix to combine (I added it 1/4 cup at a time and that worked well). Form batter into teaspoon-size balls of dough with your hands.
Put on a cookie sheet lined with parchment paper (or greased). Press the tines of a fork across the top of the cookie to make perpendicular imprints.
Bake for 20 minues. Allow to cool on the sheet for 5 minutes. Place on a wire rack and allow to cool completely.
