Had another couple we're friends with over this evening, and made some new dishes (a maple glazed pork loin with Swiss chard & carrots; roasted broccoli; and lemon & parsley quinoa). They turned out well, for the most part, and were well received. The broccoli was a trifle overdone in spots (overly hot burner while pan roasting), but still tasted good. Then we played a couple riffs on queer versions of apples-to-apples that we picked up at the end of the year. Fun time.

Last day of work for the week was good. Nice chat with a new coworker, talked over some stuff that's going on with transition, and made plans to address at least one of them with a couple quick meetings next week (because, putting on my former information lawyer hat, one should never create more written records when a conversation is better suited to the topic). Also talked about how I'm not completely clear on what my role is going to be going forward as a big part of my portfolio is moving over to another attorney who just started. I'm okay with the hire, just in a bit of limbo over the scope of my duties at the moment.

The week between Xmas and New Years can be an odd one. Cleaning up from Xmas, figuring out where new things need to go. Finishing off leftovers. Etc.

Two weeks on the new drugs, and also dropped a decongestant that I've been taking for forever (20 years?) because it can raise BP. Other than the withdrawal from the decongestant (felt like a bad head cold, especially on day three), things have settled in. Of course there's a weird paranoia that comes with having had a TIA - is any odd sensation, which would not have raised an eyebrow prior to three weeks ago, related? They're not, of course, but that doesn't stop one from idly questioning each and every one. I'm more likely now to move out of a position that will give me pins-and-needles now than I was previously, if only to prove it's not my brain misfiring (as opposed to just cutting off nerves/blood supply). Whee! Bodies are such fun.

Picked up new glasses this afternoon, which was a whole other adventure in being more active than I have been. The new Echo frames are fantastic. The other regular frames I picked out back in August seem to be cursed. Second set of lenses, second set of "this isn't right"/headache inducing oddness. I have to go back next week for a pair of readers (prescription adjusted for close work - yay aging eyes), so I'm trying out the regular ones off and on, but I swear that VSP either did nothing with the lenses, or they just can't get the prescription right. Especially since the Echo frames are, as stated above, fantastic - no issues seeing out of the new lenses there. *shrug* Hopefully they'll be able to test the lenses and see what's going on there.

The in-laws came down for Xmas and we had fun playing card/board games and what not with them. And of course the usual Xmas stuff of gifts and stockings and what not. Fare was relatively simple, no big bird or beast, but the melting potatoes were a hit again.

We have another couple coming over for New Years eve, and I need to plan out dinner. They're mostly vegetarian, which is easy enough, but I did a risotto already for them pre-Xmas so I need to plan something else this time.

In my head I was preparing for the worst scenario yesterday, and feeling like absolute dreck yesterday, today, and possibly tomorrow. I went to go get my seasonal flu and covid booster yesterday morning, and in my head I was conflating that with last year, when the husband and I got those and the monkeypox vaccine all at the same time. That three-shot combo laid me out for a day or two, so that's what I was mentally preparing for this year. The two-shot combo wasn't nearly as bad. I did end up taking a nap (which the female cat appreciated), but I stayed up to my normal time, no nausea, just a little tired. So yay for that.

While waiting to see if side effects would kick in I grocery shopped, set up soup in the slow cooker (sweet potato & apple soup), and finally seasoned (or in one case re-seasoned) all of my new carbon steel cookware. So it wasn't like I was sitting around just waiting to feel tired. Should've knitted some, too, but you can't do it all.

The out-of-office message is set, and the work laptop is powered down. Out for a little over a week as of this evening, for our annual anniversary trip to the Virginia part of the Eastern Shore.

Other than some family medical messes, and a tinge of slightly-higher-than-we'd-like-to-see blood pressure for me, things have been going fairly well. Playing the heck out of Tears of the Kingdom now, to the point where I took a break from it early this evening to rest my poor hands. I'm going into the office once a week now that Metro's yellow line bridge is back open. Or at least I am until late July when they're closing the stations near me for 45 days. I've vacillated back and forth on how much to go in, and for now I'm doing the minimum required (2 days in each two week pay period).

Still working on the biscuit recipe from January, though I've not posted any new notes yet. It's getting closer, but still needs tweaks.

I'm determined to finally finish the Grant biography this trip. I started it two years ago on the anniversary trip, plowed through the first half in short order, then just couldn't get back into a rhythm (it didn't help that I hit Reconstruction, which I find difficult to read about, given how awful this country treated her newly freed citizens). But I'm going to get it done this year.

Up far too early this morning (this is becoming a bad habit that I need to break), so I decided to try my hand at adapting a biscuit recipe (Butter Swim Biscuits) to my particular dietary needs. Substituted Buttery Sticks for the butter (my favorite margarine - doesn't have a lot of excess water like some others do), and Bob's Red Mill Gluten Free 1-to-1 Baking Flour for the all-purpose stuff, because that's what I had on hand (we try to keep King Arthur's Gluten-free Measure For Measure in the house, too, but we haven't done a good BJ's run in a while). And last but not least, almond milk with apple cider vinegar for the butter milk (and for posterity, the ratio is one teaspoon vinegar per cup of milk, which works with both dairy and non-dairy milks when you don't have buttermilk around the house).

Made it this time according to the recipe, and cooked it for the maximum time (25 minutes). Not bad, the flavor bones are definitely there, but a little too gummy/moist at the end. It did have a lovely thin crust on the edges. I'll try cooking them for longer next time, and letting them sit for a little bit in the pan before I cut them to let the bake finish. Gluten free biscuits are something of a holy grail, because the flour just doesn't react in the same ways that wheat flour does. This, though, came closer than most other recipes I've tried. I think with some tinkering of the baking times, and perhaps a tweak to the amount of liquids (butter and milk), that we'll have a winner.

I’m supposed to be working, but mostly I’m cleaning out my home office. I have taken care of a few things, so your (US) tax dollars aren’t a complete waste today, but I really felt the need to change up my home office space, get rid of trash and generally declutter it. And hey, I’ve already found an old gift card that still has a balance on it, so go me.

Xmas was a low-key affair, just the two of us. He made a delightful ‘bold and spicy gingerbread cake’, a bundt cake that used three different forms of ginger (dried ground ginger, fresh ground ginger, and ginger ale in the glaze). It turned out really well, and it’s been a nice breakfast most mornings since. I made melting potatoes (potato rounds cooked at high temperatures, and flipped twice to get them browned on both sides), and some other odds and ends. We both made out like bandits from each other, and had some interesting choices from our families (bags of rubber duckies, anyone?).

Most of the gifts have now been moved away from the tree and to their current homes in the house, which is also part of what’s instigating the home office cleaning. Books needed to be rearranged to make room for more.

I finished 99% of the endless scarf I’ve been knitting for the husband. Just need to weave in the ends and block the sucker. I’m not normally one to do a lot of blocking, but this one needs it – it has a tendency to roll inward toward the wrong side, and I’d like it to be able to sit flat when he wears it. So given the length I’ll be laying it out on the kitchen island once our house cleaner is done tomorrow. Next up is trying some brioche, specifically this pattern, once I get in some practice with the method, using the yarn I just finished playing with for the endless scarf.

Tried a new recipe this evening, from Taste of Home; Half-Homemade, a cookbook the husband got me for my half birthday last week.

Very tasty. We did not have it with syrup, and I already had a larger box of mix on hand, so I just split it and made some mini muffins in the toaster oven while this baked. Definitely recommend.

A couple Kitchen experiments today. First was sous vide chicken thighs. Bag the thighs with a little oil, salt, and pepper, and let it go in the sous vide at 165 for 1.5-4 hours (I always go with the longer time, mainly because I like to start it early and let it sit). After it's done, pull them out and let them rest on a plate with paper towels for 5 minutes, then heat a little oil in a pan, put the thighs in skin-side-down, and weight them down with a heavier pan (so they get nice and crispy) for 4-6 minutes. Pro tip - cover the bottom of the heavy pan in foil for earlier clean up. I liked them.

Next was skordalia, or as the husband called it, fake hummus. I love hummus, but chickpeas are not a low fodmap food (and, well, neither is garlic, but I tolerate garlic better than chickpeas), and I'd spotted the recipe on ATK a while back and finally decided to give it a try. Will definitely make it again. I would have preferred the almonds were a little more finely ground, but overall I was quite happy with it, and loved having a substitute for hummus. I thought the most interesting thing they did with it was soaking the minced garlic in lemon juice while the potatoes cooked, because the acid in the juice softens the bite that raw garlic has. So you get a nice garlicky flavor, but not the sting. Yum.

And the husband baked a vanilla cake, but we haven't tried that one yet. Tomorrow. Maybe for breakfast. ;)

With the in-laws here, our female cat has been crashing in the bed with me, which I love, but I'm a couple years out of the habit of sleeping with her there. She likes to curl up on top of my legs, where the male cat just curls up at my feet, so it's been an adjustment to have her back there (that was her normal spot back at the apartment, but not really since we moved to the townhouse). So I've needed to take some naps to keep going.

Lunch was a spiral cut ham, warmed in the sous vide (no glaze, because nah), melting potatoes, sautéed green beans, some stove top stuffing (family tradition for the in-laws), and rolls. Dessert was an apple crumble from the slow cooker (apples & spices cooked down for several hours, with a nut/oat/honey topping that you [quickly] bake separately in the oven). Breakfast was an attempt at a yeasted cinnamon roll, but it didn't want to rise very well, so they were a little dense. I later found a recipe for a yeast-free version, which was basically the same dough recipe but used baking powder and baking soda for the rise, so we'll probably try that in the next day or two. Tomorrow will be leftovers, with maybe some sautéed zucchini thrown in since we finished off the green beans. Or we order pizza. Who knows?

Made another batch of melting potatoes this evening, this time in a 15.5" x 10.5" baking pan, to see if it would accommodate more potatoes to feed the crowd at Xmas. I am happy to report that it did just fine. While I was able to pop in more potatoes (which I didn't measure, just peeled and plopped into the pan until it was full), I don't think it could take much more broth lest it overflow on the way back into the oven, but it did fine with a slight increase. It was a hard sacrifice to make to ensure it worked, but the husband and I girded our loins and ate the very tasty result of the experiment for dinner (along with some broiled kielbasa, and sautéed zucchini). And I'll have plenty for snacking on/lunching on this week, as it was a very large batch. So difficult.

Routines

My normal morning routine is to get up, wander downstairs, make coffee in the Keurig and take my daily medications (allergies, reflux, vitamin D since I’m a home body who never gets sunlight), do some mobility work (shoulder spin up, 27 squats), then wander back upstairs, plug in various devices (phone, watch), open the laptop to read comics, sip coffee, etc. That’s a fair approximation of most mornings. This morning I disrupted that by making oven bacon and French press coffee. Almost forgot to take my drugs because it threw me off my rhythm. But both the coffee and the bacon were worth it.

Tried putting the bacon on two aluminum baking sheets, one on the lowest rack, in the cold oven, then setting it to 425. Once it hit 425, timer for 12 minutes, and done. The lower rack made very crisp bacon as the husband likes it, and the upper one was slightly softer like I prefer. I think we may have a winner. And of course it produced nice clean bacon fat to pour off for later cooking.

Decided this was the year to upgrade our various i-devices, so we’ve both gotten new iPads (a mini, in my case - I like the smaller size for caring around the house), and we picked up watches yesterday (walked into the Apple store and basically asked what models they had in stock; thankfully the red & green ones they had matched our favorite colors). Waiting to order phones for another week or two to make sure they don’t arrive while we’re out of town for Thanksgiving. We’ve skipped several generations of updates in each of these, so it was time. Expensive, but fun to have new toys to play with. I’m still getting used to the pen with the iPad, and I think I’m coming down on the side of “nice, but totally unnecessary”.

A Day Off

The husband and I took the day off to putz about and to see The Eternals on opening day. We both really enjoyed the film. It was more about the interpersonal relations between these characters who have known each other for 7,000 plus years, with enough action thrown in to keep it fun, than the typical Marvel movie, which I found refreshing. And there was a nice gay kiss in the middle, without having to have one or both of the gay characters die at some point.

There's been a lot of work drama with the husband's place of employment the past week and a half, so this was a welcome respite from all of that. Mid-afternoon movie, so afterward we came home, heated leftovers, and vegged out while watching America's Test Kitchen. Best moment there - one of the hosts showed how you can just run your fingers down the stem of a kale leaf and take the good parts right off the stem, and I blurted out "what? that's it? what a fool I've been!" complete with arms waving in the air (I've been carefully, and time-consumingly, slicing the leaves off each side of the stem). The husband was quite, quite amused, since my normal reaction to those kinds of hints is a reserved, "huh, that's interesting".

And now early to bed because we both have early haircuts before the usual weekly comic shop run tomorrow.

In the vein of "of course, you idiot", when I plan out meals then we eat better. Duh. Tonight was melting potatoes, sautéed green beans, and some ham steak. Made the melting potatoes in a new 9x13 cast iron baking dish the husband got me for my birthday (I am a big fan of cast iron), and they were To Die For. Definitely a fantastic inaugural use of that dish, and most definitely husband approved. On the sautéed green beans, I tweaked the recipe a little (from ATK's Vegetables cookbook), in terms of ignoring the recipe's 'suggested' times, and just paying attention to what the food was doing, and they turned out much better this time. Yum all around.

Talked the husband into starting Midnight Mass on Netflix, and it was a shame that we started it so late, because after three episodes we're hooked, but the bed call and I've learned not to ignore that.

Minor win at work this afternoon. We have this automated document approval system, that's supposed to be used to document the review process for things, moving the document from one reviewer to the next in order, and showing when they signed off. I'm on a team along with several other lawyers and staff in our agency head's main office who get certain documents for review as a group before they go in for formal concurrence, so a group of roughly 8 people get these certain documents at the same time using a group email alias. Lately the program offices have been "assigning" these document to this group in the system with two days to review, or sometimes a single day, which would be fine except the system then emails you ever day reminding you that you have a task that's "overdue", meaning all of us are getting these annoying reminder emails daily. When we got one mid-afternoon today with a due date of Sunday the 31st, I decided I'd had enough. Poked around the system and discovered we could "reassign" the task back to the originator without clearing or approving it, so I did that, with clear instructions to bounce it back to us with a due date at least a week out. I plan on doing that every time some moron "assigns" me something with an unreasonable due date. Best part, since it's now reassigned back to them it doesn't show up as being with us at all, and they get any 'past due' reminders (though I set their due date for Tuesday because I'm not that vindictive. Yet).

Well, that's not true, I had plenty planned. I ran 3.2 miles. Our cleaning person came. I cooked another meal I'd bought the ingredients for earlier this week. So I actually planned a lot, it just felt like I didn't because of the surprise holiday.

Around all that, I played a lot of AC:Odyssey. Whee. ;)

The husband was meh on dinner. I mean, he ate it, but it was clearly not his favorite thing. Chipotle braised pork with rice. I thought it was pretty damned good for a first time trying the recipe, especially after I had to substitute pork loin for the pork butt roast called for in the recipe. Whole thing was done in a dutch oven, starting with sautéing some peppers on the stovetop, blooming the spices, adding the liquids and the pork, then into the oven for an hour, then add brown rice, back into the oven for an hour. Pop some drained canned lentils in off-heat for five minutes, then mix in the finishing herbs and done. It sounds like a lot, but it really wasn't hard, just a lot of time in the oven.

Yesterday was also rice in the oven, along with poached chicken breasts and a warm tomato vinaigrette. Tomorrow is burgers, hopefully outside if the weather holds. Sunday is turkey sausage and fennel pasta. Monday will be italian sausages in the sous vide with homemade marinara and either rice or pasta, I haven't decided. Those are all dinners, lunch is usually leftovers, and I've been skipping breakfast of late, so I've had plenty of food to choose from for lunch.

Had a friend over for dinner this evening (well, as we joked about it after, dinner and therapy - the husband works on him whenever we meet). Made a new recipe for the second time, adjusting it as needed for my lazy self (because, really, who's going to use half a pound of ground turkey when it comes in a 1 lb container, and similarly, why just use 2/3 of the box of pasta? make it all and give me leftovers, please). Turned out pretty well. Pasta with turkey 'sausage' (ground turkey plus spices), fennel, and broccoli. Yum. And chatting with our young friend (aka therapy) was fun as well. He's so bright, and so curious, but he keeps trying to limit himself to jobs/schooling where it's plain to see he's not going to be happy. Hopefully the talking helped.

Lots of work on and off this weekend as the Hill works on new authorizing legislation for the Small Gubm'nt Agency. Every time I thought it was calming down it would pick up again. Blech.

Talked on the phone for an hour with one of my nieces while I walked her through some of the finer points of Diablo 3 for the Switch. ;) That was a lot of fun, showing her how to advance and get some of the rewards that come from seasonal play, and explaining why I'd told her to save or get rid of certain in-game items. Hopefully she'll help her younger sister with some of that, too. And Diablo 2 gets re-released this summer, so the husband will lose me to that when it's out.

We're prepping for our annual anniversary trip next week. Missed last year for the pandemic, so very much looking forward to getting out of town this year. Have to remember how to pack for this. Or just how to pack, period, since it's been so long since we travelled last (maybe Xmas 2019?). Wild.

Rarities

Did that rare thing and started a knitting project today. Another scarf, Breckenridge by Jared Flood, using their now retired Parka color in the Arbor line. The pattern is simple, but it took a couple of rows to get it down pat. This one is for the husband, and who knows when it'll be done. Given my track record, some time next year. Not that we need scarves any time soon, since we don't really go anywhere. But it'll keep my fingers busy. Interesting part was starting the intro ribbing on a smaller needle (4), then going up to a 7 for the real pattern.

Speaking of knitting, the lap blanket I did a few years back has a huge hole in it. I suspect the join where I switched skeins came apart, but now I have a several stitch wide, couple row deep hole I have to figure out how to repair. If I still have any of the yarn left. I think I do, but that requires hauling out some totes, so in the meantime it's stashed in a closet so it hopefully won't get stretched further.

Beyond that, it was a nice quiet weekend. The husband is in a lull between semesters both for work and school, so he enjoyed being a lump most of the weekend. Well, other than taking all the Christmas stuff down, that is. I tried a new way of cooking a seasoned brown rice (baked in the oven) that didn't quite work, but I then tried it in the instant pot and it turned out much better. Will tweak it further the next time we make it, but was nice to add another dish to the repertoire.

Gaming

As I said to a friend today, there's only so much time I can spend in Animal Crossing. I enjoy the game, though sometimes the 'gotta check in daily' part gets old. I've scrapped all of the mobile games I had going, save a nonogram one I've been playing on my iPad mini for forever, and the NY Times crossword (mostly the minis, occasionally the big one if the mood strikes). I looked around in various game store today, and while there are a couple coming out that I've put on the Xmas wish list, there's really not a lot out there that's exciting me (that I don't already have). I find myself drawn to cuter, slower-paced things more than the drag-you-in-for-hundreds-of-hours mega-sagas.

So, quiet day today. I cleaned out some more things that had been tossed under a bathroom sink when we moved in, putting some out, tossing some that were dead or wouldn't be used. Made popcorn on the stove (1/2 cup oil, 1/3 cup corn, medium heat in a dutch oven with the lid slightly askew so it can vent [or cheat like I do and use a different lid that has venting holes]; shake it occasionally until it's done popping, toss it all in a bowl with 1/4 to 1/2 tsp salt [no more than 1/2 tsp; that's almost too much for me and I'm a salt-a-holic], enjoy). And played a lot of video games. The female cat would've preferred if I had read so she could have had my legs as a bed, but she curled up next to me anyway.

I decidedly ignored the news yesterday, for the most part. And I've mostly done so today as well. I took the attitude that I did my part (I voted by mail and confirmed it was in and counted), there was nothing more I could do, and simply doom scrolling through news that I could not affect and would simply add stress to my life was not worth it. And I think that, again for the most part, that has worked for me. YMMV.

Yesterday I ended up going to the local Yes! Organic Market for some veggies, and made a Sweet Potato & Apple Soup in the slow cooker. Was tasty, but will add thyme to it next time. The original recipe called for adding thyme as a garnish, which I did, and the bites with the thyme in it were much more flavorful than the plain soup. That was dinner, along with corn bread muffins. The husband made a crumb cake earlier in the day, so we had that as well. Debating getting the stuff to make Instant Pot Mexican Rice later in the week, as the husband, normally not a fan of chicken, has given the go-ahead to try to convince him otherwise with more flavorful chicken recipes. Challenge accepted.

Waiting for my stomach to settle here, post-coffee & poo, then will brave the cool temps (46F-ish) for a run here. Then we might go to the comic shop today, or we might wait until tomorrow. Undecided. But I will continue to try and avoid the news, for the most part.

'Twas a nice quiet weekend. The biggest (?) thing was finally finding a copy of Ring Fit Adventure for the Switch. As with their previous forays into exercise, this thing was no joke. I just did the first round yesterday, but found myself having to back off the intensity so I could get all the way through the level (running in place too quickly is a bit too tiring, even for this runner). Past that I enjoyed leftover cupcakes and generally being a lump around the house.

Today has been watching people ask me a question via email, then in the ensuing chain of back-and-forths, coming around to the proper answer before I have time to turn to it, research, and respond. Thank you, client offices, for making my job easier by doing it for me. LOL I get that sometimes you just need to put things in writing for them to start to make sense, but this was a bit silly.

Discovered yesterday that we can in fact cook sausage in the sous vide straight from the freezer, as long as you give it some extra cooking time. It's not quite crock pot easy, but if you set the stuff up in the bags before you freeze them, that's not a bad way to cook. Leftovers were very tasty for lunch today. And now that lunch is over, back to seeing if more clients have done my job for me. :)

I had to go buy a new dishwasher for the old apartment, because after we moved out but before it was listed the damned thing that was in there died. It was on its last leg, but I was hoping it would stay up until the place sold. Ah well, cheap-o dishwasher replacement it is. Now if the place would just effing sell already, as I would like to have only one mortgage, thankyouverymuch.

Still trying to get used to cooking on gas. I think the last time I cooked with gas was when I was an undergraduate, sometime late in the previous century. So trying to match burner sizes with pots has been a challenge (there are four burners plus a center griddle, and the burners are all different sizes, from 'small' to 'extra large'). Medium and large seem to be my go-tos at the moment, which is kind of obnoxious because they're both on one side of the stove (small to extra large, going counter clockwise, starting at 2:00, to 10, to 6, to 4, so they're both on the left side). I think I will look at a one of the fancier ones with multiple rings of flame when this one dies - it just seems like a waste of heat when it all just hits the outside of the bottom of the pan (unlike electric, which heated the whole bottom of the pan, albeit more slowly).

But at least we've (mostly) mastered cooking without the fire alarm going off. ;)

The white drapes the previous owners left in my office are a delightful magnet for black cat hair (he typed, while being nudged by said black cat for not paying attention to him).

Managed to haul out my knitting for the first time since we moved, and powered through a couple sets of the pattern (I'm supposed to do something like 16 sets of 16 rows for this scarf, and I'm on set 7, row 6 as of last night - I was at set 4 row 12 before this week). I might actually get it done before it gets cold enough to wear it. Maybe.
