Creamy Dairyless Rice Pudding

3/4 cup white rice (preferably basmati)
1 qt (4 cups) soy milk (Vanilla is okay, but then use the smaller amounts of syrup and vanilla extract)
1/2 cup (or 1/4 cup) pure maple syrup
1 teaspoon ground cinnamon
1 teaspoon (or 1/2 tsp) vanilla extract
1/4 cup currants or raisins
1 teaspoon freshly grated lemon peel
sliced seasonal fruit (optional)
1. Bring water to a boil in a heavy saucepan. Add the rice and simmer, uncovered, for 5 minutes. Remove from the heat and allow to sit for 5 minutes. Drain the rice and return it to the pan.
2. Add the soy milk, maple syrup, cinnamon, vanilla, raisins (or currants), and lemon peel. Bring to a boil, then reduce the heat and simmer gently for at least 30 to 40 minutes, stirring often, until the pudding is thick and creamy. Serve warm (yum!) or chill for at least 2 hours or overnight (great breakfast food!).
3. If you like, garnish it with fresh sliced strawberries or other fresh fruit (good warm or cold with the fresh fruit).
