Tuesdays are not run mornings for me. I run M/W/F/Sa most weeks. So, in an experiment, I cooked this morning so I'd have lunch to take with.
Curried tofu scramble with zucchini, onion, and carrot
Baby arugula with sliced almonds and a tahini-based dressing
Cookies
And some snacks for the day, too, so I don't go purchasing stuff at the little store in the building. I want some more control over what I eat at lunch, cutting down on some of the junk I eat.
Will admit it felt strange to fix the food and then eat none of it. I split the batch of scramble between lunch today and dinner tonight (when I'll get back late from a meeting), and then made cold cereal for breakfast (bran flakes, banana). Whee.
