Mountain-High Chocolate Cake

Baking Time: 25-30 Minutes (more like 40 in my experience)
1 1/2 cups unbleached white flour
1/3 cup unsweetened baking cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 1/4 cups water
1/2 cup vegetable oil
2 teaspoons vanilla extract
2 tablespoons plain red or white vinegar
1. Preheat the oven to 375 degrees F.
2. In a baking pan (9-inch round, 8 inch square, of 9x6-inch rectangle), combine the flour, cocoa, baking soda, salt and sugar.
3. In a small bowl, combine the water, oil, and vanilla extract. Pour the liquid ingredients into the dry ingredients, and whisk with a fork to combine (be careful to get the lumps out!). Add the vinegar, and stir just until the vinegar is distributed around the batter (there will be color variations in the batter from the reaction between the vinegar and the baking soda).
4. Bake for 25-30 minutes (I found it needed 40 until a knife came out of the center of the cake cleanly). Remove from oven and enjoy warm or cool and enjoy.
Yield: 8 servings (unless you're really hungry, in which case it'll be many less servings *grin*).
