Why must they hide milk in EVERYTHING food-wise in this country? Can someone please find me a job in Taiwan so I don't have to be paranoid about everything I eat?

Seriously though, I know what you mean, the FDA labels and ingredients lists really don't make me any less wary, or feel more confident that what I am eating isn't going to mutate me by the time I am 40.
No worse than pork intestines, sea slug, pigeon or jellyish, all of which I ate while living there the last time. :-)
I really, really appreciate it when companies like Kellogs put things like "milk free product" on stuff like Pop-Tarts. It's more a problem going to restaurants where they sneak butter into everything. :-p
I think Moose knows a little more about Taiwan than a travel show could provide. Then again, he hasn't been over here in ages, so he probably doesn't know that TGI Friday's and Starbucks have taken over. And people were worried about mainland China!
I haven't seen any baking books specifically, but Tofu Cookbooks tend to use soy substitutes for milk and the one I have doesn't include eggs. The dessert/baking section is pretty small though. Here is the title :
Ok, after a bit of digging and scrounging through my cooking notes, I found these egg replacement suggestions
EnerG Egg Replacer (haven't seen this on the shelves yet, will look at the co-op next time I go)
2 T Cornstarch per egg
One banana per egg in cakes
I haven't experimented with this much so can't really give an opinion. I have a bunch of bread "heels" in my freezer with which to make bread pudding, though, and will try either the cornstarch or banana substitute for it. Banana bread pudding doesn't sound too bad, actually...what do you think? :)
