Easy squeezy Banana Bread recipe

Was digging about, looking for the easiest recipe for banana bread I could find in my cookbooks that didn't require prune puree or the like. Wanted simple, and while this does require eggs (or, in my case, egg replacer), it's all stuff that I keep on hand as staples (flour, sugar, baking soda, salt, oil, bananas, egg replacer).

One other note, I liked it with a little cinnamon and allspice sprinkled in at the end. Yum!

Simple Banana Bread

1-1/4 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
2 very ripe bananas
2 whole eggs (or, in my case, egg replacer worth two eggs)

Directions:
Preheat oven to 350.
In a large mixing bowl, stir all the ingredients together, in order, until well blended.
Rub the insides of a loaf pan lightly with vegetable oil to prevent sticking.
Pour batter into loaf pan. Bake in 350 oven for 50-60 minutes, or until toothpick or knife inserted in center comes out clean.
Let sit for 5 minutes to cool, then pop out onto plate.
Slice and enjoy!

Man, I love banana bread. I'd probably replace the oil with applesauce, but that's me.

Actually, I'd also add chocolate chips. Banana bread with some chocolate chips *rules*.

Yep. But applesauce makes a good stretch if you've only got 2 overripe bananas. :)
